– Toxicity by biogenic amines: biogenic amines are biologically active organic bases formed by the decorative carboxylation of amino acids. The most important biogenic amines are histamine, tyramine and catecholamine. Some bacteria are able to form biogenic amines, which can enter or be formed in the body through food. They can usually be found in a variety of meats, fish, wines, cheeses and overripe bananas. In milder cases itchy skin, hives on the face and limbs, in severe cases a drop in blood pressure, respiratory and sensory (vision) disorders may occur with nausea and diarrhea.
– Mycotoxicosis: mycotoxin is the toxin in filamentous fungi and molds. They are found mainly in cereals and peanuts. However, the presence of spores in molds can multiply in almost all foods.
