The primary aspect during processing is cleaning with running water and keeping the environment and utensils clean and disinfecting. In the course of kitchen technology processes, the steaming of vegetables (raw materials, we only eat well-washed vegetables from organic farming), the proper frying and cooking of meat and fish are the most important, and the storage at a closed and appropriate temperature. Of the eggs, duck eggs should not be used because they are infected with Salmonella inside and out (goose eggs are also more dangerous than e.g. the hen’s egg, so the goose egg should only be used as a hard egg after 10 minutes of cooking! Wash the hen’s eggs thoroughly only before use, but do not store them in a washed state, because the thin layer of mucus that closes the pores of the eggshell is removed from the egg during washing, so it spoils sooner.
